Spicy Salmon Tacos
Serves 4. Tasty spicy salmon tacos. Take the spice to the heat you like best, but these do make a great lunch rain or shine.
Ingredients:
1 213 g Can solid salmon in water, drained
8 5″ corn tortillas
3 Tbsp Greek Yogurt
3 Tbsp Mayo
3 Tbsp Rice vinegar
2 Tsp honey
4 C Shredded cabbage(pick you preferred color or type – combine more than one if desired)
1/4 C Chopped Cilantro
1/4 C Finely chopped red onion
1/4 C Chopped red pepper
1 Jalapeno
4 Tbsp Toasted sesame seeds
Optional: Hot sauce if desired
Directions:
- Place the drained salmon is a small bowl and break up with a fork.
- In a large bowl combine the yogurt, mayo, vinegar and honey and mix.
- To the large bowl add the cabbage, cilantro, onions, red pepper, jalapeno and sesame seed. Mix until combined fully with dressing
- Warm a dry fry pan to medium heat and place your tortillas in the pan for a minute each side to make them pliable.
- divide the salmon and the slaw among the tortillas, add hot sauce if desired and service
