Chili
This is my quick chili recipe. When I want chili I can put this together in a couple hours and you have meals for a while. Freezes well too!
Ingredients:
1 Lb Ground beef
1 Lb. Ground pork
2 Large Cans red kidney beans
2 Large cans black beans
2 Large cans Diced tomatoes
2 Large cans crushed tomatoes
1 Large can corn
1 Medium onion (pick your color)
1 reed, yellow or green pepper
2 Stalks celery (optional)
3 Grated cloves of garlic
1 Jalapeno (or any other pepper you might like – optional)
2 Tbsp. Chili powder
1 Tsp. Chipotle powder
Salt & pepper to taste
1 Tbsp. Olive oil
Optional (and to your preference):
– Grated cheese
– Cilantro
– Broken up taco chips
– Guacamole
– Sour cream
– Red pepper flakes
– Anything else you might like to add that is spicy
– You can substitute the pork and beef for 2 lbs. of ground poultry if you wish
Directions:
Dice up onion, celery and peppers. In a large soup pot ad the oil and cook the ground meat until browned. Once browned add the celery, peppers and onion and cook for 3-4 minutes until the veggies have softened. Now add in tomatoes, corn, spices and beans. Stir until mixture comes to a simmer. Cook simmering for an hour. Scoop into bowls and serve with any desired toppings. Enjoy.
