Simple Slaw

When I can get away with it I am all about simple. This Coleslaw pairs great with any pork dish. A great side indeed. And super easy to make.

Ingredients:

1/4 large head of Cabbage (use red, green, or both – doesn’t really matter)
1 Tbsp prepared mustard
1 Tbsp Dijon mustard
1 Tbsp Grainy mustard
2 Tbsps maynaise
1 Tbsp honedy
1/2 tsp Chipotle powder or chill powder if you prefer less heat
1 Tbsp Kosher salt

Method:

Cut and core your cabbage. Slice the cabbage into approximately 1/2 inch strips. place the cut cabbage in a large bowl and add the salt. Here is where it gets fun. With your hands mix the cabbage and salt for 5 minutes. When done put into a colander and rinse the cabbage really well to remove the excess salt. Now take the cabbage and try to squeeze as much excess moisture out of it that you can and return it to your bowl.

In a small bowl mix remaining ingredients together then add them to the cabbage and toss. The salad is now ready to serve. I recommend tossing the salad just prior to service or you’ll find extra liquid at the bottom of your bowl. You can easily double (or more), the recipe . May take a pretty big bowl to accomplish though.
